As many of you might have participated in over this holiday season, the Cuban tradition of roasting a complete pig. (Noche Buena and even New Years Eve) This feast is sometimes cooked in what is called «La Caja China». This holiday season I decided that «China» has already taken way too much from us as it is, so I decided I would make what I called the «Caja Cubana». It is still not 100% complete, but I figured I would share the video of how it was made and the first Pig that was cooked in it. Hope you enjoy it as much as I enjoyed making it.
