Roasting a Pig Cuban Style with a La Caja China

Man am I glad I found this video. I am planning a pig roast for the end of the summer and was going to rent a roaster for $220.00, but I can get one of these La Caja's for $320.00. So awesome. Thanks for the video!!!!

Mr. C.C. Chapman, Thanks a lot for making this video and sharing! I got a La Caja China model #1, a 45.2lb pig at a Costco Business Center, and followed your recipe for Mojo, rub and cooking tips & guidelines exactly. It came out awesome!! After turning the piglet over at ~3hrs, we let it go for about another 45min and it came out absolutely perfect with delicious crispy skin. We knew it was gonna be awesome within the first 30 minutes when that beautiful aroma of roasting swine and Mojo began to permeate the atmosphere of our party! It tasted even better than it smelled and that's saying A LOT! Major kudos to you for this awesome Mojo recipe and rub!

Great video man. I currently use a cinderblock pit i built for my pig roasts. (I like smokeing it as i roast). But that box you have makes it more user friendly. Cooking times are about the same but i thnk on my pit i use more coals. Cheers from Lynn Ma.

Great video! Probably the best I've seen so far.When it's your first time doing this it can be a bit over whelming, the only thing I would change is after you flipped the pig over and scored it, i would have salted the back side. You could hear one of the guest saying that it needs a little more salt, at the 20:10 mark after being handed a piece of skin.
You forgot to put salt on the skin.
You still need to temp probe the pig while cooking. I just watched a video when they burnt the hell out of the pig because they didn't keep track of the temp.
